Sweet Potato Crepes

Sweet Potato Crepes have been a hit in my home, eversince I first tried them. I have been wanting to blog on it since a long time. However they would all be wallopped faster than I had a chance to photograph them. The soft and fluffy nature of these crepes allows them to be used as a Baby's First Foods and also as a good breakfast option for the family. I have found that sweet potatoes and jaggery make a great combination.Superfood Sweet Potato.
Ingredients-
1cup sweet potatoes boiled and cubed
1 egg
1 cup milk
1tsp baking powder
3/4 cup flour/maida
2tbs grated jaggery(adjust according to taste)
3 cardamoms ground
2tbs salted butter

Preparation-
For the health benefits of sweet potatoes, read
  • Sift the baking powder with flour and keep aside.
  • Mash the sweet potatoes well and add the egg, mixing well.
  • Slowly add the flour into the mixture using half of the milk to stir it.
  • After mixing well add the rest of the milk to make a pouring consistency. Add more milk if required.
  • Add the jaggery, ground cardamom, and 1tbs of melted salted butter.
  • Fry the crepes on both sides, on a skillet using the rest of the butter.
  • Serve hot with some fresh cream.

  1. These Sweet Potato Crepes sound so good. Since I don't have jaggery, can I substitute brown sugar?

    Good to see you. Yes you can substitute it with sugar. Since I keep babies in mind I use natural sweeteners like jaggery, date syrup and honey.

  3. Good point. My son-in-law is very picky about the type of jaggery he uses so I'll ask him for a couple of tablespoons next time I see him. I have another question, when you grind cardamom seeds, do you remove the husks first? I assume so. Thanks, too, for visiting my blog and following it. Definitely keeping in touch.

  4. Yes Mary Ann, cardamom seeds are peeled and then crushed with a mortar and pestle.
