Corn Fritters



This is my first at the Secret Recipe Club and the blog assigned to me was  A Taste of Home Cooking.
Since I am always on the look out for recipes with corn I was excited to find Corn Fritters. I have not adapted the recipe as its the first time and I wanted to know what it was originally meant to taste like. It was fun and on the kid-o-meter certified as "yummy". No surprises considering the empty plate below and the 'asking for more'.


Corn Fritters
Ingredients-
1 1/2 cup of corn
1large egg beaten
3tbs all purpose flour
3tbs cornmeal
2tbs heavy cream
1small shallot minced
salt and pepper to taste
Oil for frying


Preparation-
  • In a bowl mix all the ingredients except oil.
  • Heat oil in a skillet and pour the batter in heaps. Fry till golden brown on both sides. Drain and serve warm.
  • Enjoy!

  16. My mom would make corn fritters often when I was a little girl. I loved them and we would dip them in maple syrup! She didn't use shallots though. ;)
