Cornbread Muffins


For the Secret Recipe Club this month I was assigned Kelli's blog Ambition's Kitchen. Out of all the tempting recipes, I chose to prepare Cornbread Muffins. I noticed in her post Kelli wished it was "healthier" so I adapted the recipe to make it healthier. Instead of white flour I've used wholewheat and instead of sugar I used honey and what you see is the outcome.
Cornbread Muffins
Ingredients-
1cup cornmeal
1cup wholewheat flour
1tsp baking powder
1tsp baking soda
1egg beaten
1/2cup honey
1cup milk
1tbs salted butter
Preparation-
  • Combine all the dry ingredients.
  • Make a well in the center and add the wet ingredients. Combine well.
  • Grease muffin trays and pour in mixture.
  • Bake at 150 C for 15 minutes or till toothpick comes clean.
  • Enjoy!
