Physalis Salad


Phyalis is also known as cape gooseberry. It is a small orange fruit similar in size shape and structure to a small tomato but covered in a papery husk, which is uncovered when eaten. There are numerous cultivars of physalis which offer a range of flavours from tart to sweet.
Many of us have childhood memories of plucking them from plants growing in the wild. 
These berries are a good source of Vitamin C, beta carotene, iron, calcium and trace amounts of B vitamins.
I threw them in this colourful salad with a light vinaigrette dressing.

Ingredients
Physalis quartered
Purple cabbage shredded 
Carrots shredded
Lettuce torn
Dressing
EVOO
Lemon juice
Honey
Fruit vinegar
Preparation

  • Whip the dressing ingredients to emulsion and toss all the ingredients together.
  • Enjoy!
