Rice Pancakes. (Shrove Tuesday Pancakes)


For the Secret Recipe Club assignment this month I was assigned Beans blog Without Adornment. I had a nice time going through Bean's blog and her recipes. I make pancakes on a regular basis experimenting with different flour combinations. The recipe I chose for my assignment is a rice flour pancake. Though Bean's original recipe is a Shrove Tuesday pancakes, I guess a pancake can be enjoyed anytime of year. I added some jaggery to sweeten. This pancake can be eaten for breakfast, brunch or even used as a nice wrap with some stuffing.

  8. Great pick! My mom was allergic to wheat and so I started having rice pancakes when I was in Jr. High. She would have loved these :-)
