Leftover Fruit Platter Popsicles



Sweltering summer in this part of the world. Nothing like the joy of delving into a fruit Popsicle as it slowly melts into you mouth.
This month for the Secret Recipe Club I had the privilege of exploring JJs blog 84th and 3rd. I thoroughly enjoyed going through many of her recipes. J.J is remarkably creative in her food development and very explorative. I am completely bowled over by her work and presentation.

Leftover Fruit Platter Popsicle
Ingredients
2 cups mixed fruit ( watermelon, orange, muskmelon)
1/4 cup coconut milk or almond milk
1tbs lime juice
1 cup ice cubes

Preparation

  • Blend all ingredients till smooth.
  • Freeze in Popsicle molds.
  • Enjoy!

  2. That looks perfect for the coming summer months! We just got some popsicle molds and I can't wait to make our own - we make lots of smoothies already, so I figure it's only natural to freeze some for popsicles as the weather starts warming up. These look fantastic! :)

  3. Never made a popsicle, but almost got some of the thingies to make them at amazon.com - then decided against, and now you are making me re-consider.... Summer is coming, after all ;-)

  5. I really love this idea. I always have a few strawberries or blackberries left. Love the idea of being able to use them up in popsicles. Keeping this recipe for summer.

  12. Yum. There's nothing better than a refreshing fruity popsicle on a hot day, and this is a great way of using up some odds and sods from the fruit basket. Great choice.
