Uova in Purgatorio

For this months Secret Recipe Club assignment I really enjoyed stalking  Christie's blog A Kitchen Hoors Adventures. Her blog is simply fantastic. A great collection of recipes and pictures to go with them. Every picture makes you want to give the recipe a try.
I finally decided to settle for Uova in Purgatorio. A dish to represent souls in purgatory. To put it simply they are eggs poached in tomato sauce.
I discovered there is a similar Tunisian dish called Shakshouka, with the addition of peppers and onions. Christies recipe gives details of how you can prepare this, do visit her blog.
Ingredients
  • 500 gms tomatoes
  • 1tbs Italian seasoning, 
  • 1/2 tsp garlic powder
  • 2 tbs garlic
  • pinch of crushed red pepper
  • 4 large eggs
Preparation
  1. Preheat oven to 350.
  2. Strain the tomatoes.
  3. Arrange the tomatoes on a baking sheet and sprinkle with 1 tablespoon of the Italian seasoning and the garlic powder.
  4. Bake the tomatoes in the oven 25 to 30 minutes or until the juices around the tomatoes evaporate and begin to brown. Remove from the oven and allow to cool slightly.
  5. Place the tomatoes in a blender. Refrigerate until ready to use.
  6. Heat a large skillet coated with cooking spray over medium-high heat. Add 2 teaspoons extra virgin olive oil and sauté the garlic until fragrant; about 2 to 3 minutes.
  7. Add the sauce. Cover the pan and bring to a light boil. Reduce heat and simmer until heated through, 10 to 15 minutes.
  8. Once the sauce is heated through, using the back of a spoon, make 4 wells in the sauce.
  9. Crack each egg into the sauce, cover, and simmer 9 to 15 minutes.
  10. Serve with garlic bread.

  8. Thank you for your kind words! We just made this one recently, too! It's part of my eggs around the world I'm working on. They were so delicious, too! I forgot to mention that I served them over lebneh topped toast in my post. Oops. Looks awesome!
