Sooji Halwa is also referred to as Sheera in Maharashtra. I have made it using milk only, focussing on the nourishment for babies and kids. It is usually made in a mixture of milk and water. If you would like to use is as part of the baby's first foods you can sustitute the broken dry fruits with dry fruit powder, so that its easy to swallow. If you cut it into diamonds as I have it can be easily packed for dessert as a part of the school lunch.
Ingredients-
- 3/4 cup fine rawa/sooji
- 2 cups milk
- 5-7 tbs sugar(adjust according to taste)
- 3 cardomoms powdered
- dry fruits- cashew, raisins
- 2tsp ghee
Preparation-
- Roast the rawa in ghee. Keep aside.
- Pour the milk and sugar in a pan and keep stirring till it comes to a boil.
- Add the the sooji slowly as you keep stirring. If you add the sooji without stirring it will form lumps.
- Keep stirring the mixture and as it cooks add the dry fruits and cardamom powder.
- Keep stirring till the mixture begins to leave the pan.
- Take it off the fire.
- Grease a plate and mould the mixture in when its cool enough to handle.
- Cut it into diamond shapes and its ready to serve.
