It's great to be back for the International Incident Party this month, having missed it the last couple of times.
This month's them being Mexican Breakfast, here's something delicious and healthy to begin the day.
Guacamole is an Avocado based dip that originated in Mexico.
Tacos is a traditional Mexican dish composed of a corn or wheat tortilla folded or rolled around a filling. A taco can be made with a variety of fillings.
I've added some twist to the traditional Guacamole... end result.... empty dishes.
Guacamole-
2 ripe avocados
1/4 cup finely chopped onions
1/2 cup finely chopped tomatoes
1/4 cup finely chopped cilantro
2 tbs mayonnaise
1 cup shredded lettuce
1/2 cup shredded cheddar cheese
lemon juice
Tacos-
6 taco shells
Preparation-
- Scoop the avocado, mix with tomatoes, onions, cilantro and lemon juice.
- Add the mayonnaise.
- Grill the taco shells for 2 minutes. Divide the filling equally.
- Sprinkle the cheese on top and serve.
- Enjoy
