Healthy Veggie Muffins

This month I had a great time with my Secret Recipe Club assignment! I had Jess 's blog Flying on Jess Fuel.
I enjoyed browsing through her blog especially after I realized that she grew her veggies at home. Since I've been doing the same for a while I could relate to the situation where we have a bountiful harvest of one veggies and we try out all possible recipes with that veggie. I finally settled with Healthy Veggie Muffins. Though my homegrown zucchini is not yet ready for harvest, I decided to prepare this one because it absolutely fit in everything I love. A completely enriched muffin for the whole family to have as a snack, or brunch. The combination of veggies with cranberries and nuts seemed perfect!
Do hop over to Jess's blog for more.

  13. I used to make this for my 2 year old without the cranberries and with sugar instead of honey (because I don't like the taste of cooked honey). For two years, he thought this was cake!!! lol!
