When I posted pictures of this jam, I received a lot of surprised responses. It seems difficult to imagine tomato as a jam maybe because of its tartness?
We happened to have an abundant harvest of Naati tomatoes. Since homemade jam is one of the most wanted items in our home, I decided to make jam out of tomatoes. I toyed with the idea of using honey instead of sugar, but it would require a lot of honey for that. Besides honey is best consumed raw than heated for its properties?
Since I have used Naati tomatoes which are highly acidic in taste my use of sugar is according to that. If you are using tomatoes that are less acidic please adjust sweetness according to taste.
2kgs Naati tomatoes
1 cup sugar
2 tbs chopped Thai basil
1/2 tsp ground cinnamon
1tbs lemon juice
1 tbs ginger juice
- Wash and chop tomatoes.
- In a heavy based deep pan cook the tomatoes. Do not cover.
- When the water content has reduced, add the rest of the ingredients and continue cooking till you get a jammy consistency.
- Switch off the heat and store in glass bottles after cooling.
