Rainbow Salad

I had done a post on Rainbow Nutrition last month and I was really happy to receive an overwhelming response over it. Its great to connect with so many of you like minded nutrition-aware folks who are making a deliberate attempt to eat healthy.
Here's a simple salad assembled to incorporate as many natural food colours as possible. I just love the simple combination of olive oil and lemon juice in a dressing. Do you?

Ingredients-
1 Carrot
1 Tomato
2 leaves of Purple cabbage
1/2 cup Sweet corn
Cilantro
White sesame
For Dressing-
1tbs Extra Virgin Olive Oil
Lemon juice
salt(optional)

Preparation-
  • Wash clean the carrot and tomato and grate. Chop the cabbage.
  • Microwave the sweet corn for 40seconds, chop the cilantro.
  • Add olive oil, squeeze in some lemon juice, salt to taste(optional). Mix all the ingredients well and sprinkle some sesame seeds.
  • Enjoy.

  4. Dont we need to boil the sweet corn? I mean if not it will be hard to eat?

  5. Hi Sweta,
    If you are using American sweet corn you do need to microwave it for 40seconds as I have mentioned in the recipe. If you are using the regular corn you will need to boil it. However take care not to over cook.
