Healthy Wholemeal Spiced Veg Pizza- International Pizza Pie Incident

After the huge success of the International Gnocchi party, its time for the International Pizza party. Though I was a first-timer at gnocchi, this time I wasnt willing to risk that since it came to matters of the yeast, and its also our host's Birthday.

A very Happy Birthday to Penny our host through whom the whole concept of virtual International party has evolved!

Ingredients-
For the culture-
1tsp active dry yeast
2tsp warm water
1tsp honey/sugar

For Dough
2cups wholemeal flour(atta)
1tsp red chilli powder
1tsp garam masala
1/4tsp asafoetida
1tsp cumin powder
2tsp garlic chilli paste
salt to taste
2tsps oil
1/4 cup flax and sesame seeds

Preparation-
Base
  • Mix all the ingredients for the culture, stir well and leave aside for 10 minutes, till foamy.
  • Stir in all the ingredients for the dough (except oil and seeds) with the culture. Add water as required and knead into a dough. The dough should be soft and springy.
  • Form into a ball, cover with a wet soft cloth and leave aside for 1-2 hours till it doubles.
  • Add the seeds and knead again. Leave aside for another 1-2 hours till it doubles.
  • Knead again, divide the dough into 2 equal parts and roll into a ball.
  • Press flat with the hand using some flour.
  • Grease and dust the pan.
  • Place the pizza circle into the pan and mould into shape, with the hand and the back of a spoon.
  • Press holes into the surface using a fork, to let the steam out.
  • Bake in a pre-heated oven for 10 minutes.
  • Your pizza base is ready for use.

Sauce-
Ingredients-
2 large ripe tomatoes
3 cloves of garlic
1/2 onion
salt to taste
oregano
ground pepper
Preparation-
  • Blend all the ingredients.
  • Cook in a pan till thick.
Toppings
I kept the toppings simple, so as to be able to enjoy the spiced base as well.
For toppings-
onions
bell pepper
mushrooms
grated cheese
salt
pepper

Preparation-
  • Chop all the veggies fine. I prefer to chop than leave veggie rounds, since kids tend to leave out the veggie circles.
  • Add salt and pepper.
Assembling a pizza-
A pizza is assembled in 5 layers
  • A layer of sauce to keep the pizza moist.
  • A layer of cheese.
  • A layer of toppings
  • Another layer of cheese
  • Seasoning (after the pizza is baked)

  7. I love that this is a healthy, but flavourful pizza. I was thinking of incorporating kalonji / nigella seeds / black onion seeds into my pizza dough, but decided to take it out as the Mr. does not like it all that much. Will have to try your spiced dough out sometime, perhaps with some besan flour as well.
