I simply loved my assignment for Secret Recipe Club this month!! My only regret was that I had to pick one recipe to showcase. Sally from Bewitching Kitchen had my blog as for assignment a few months ago. And being from Brazil honoured me by trying my pumpkin twist on the bolo-de-fuba with a nice tutorial on the lingo as well. I was delighted to be assigned her splendid blog this month. Honestly I would have loved to pick a dozen recipes. But I settled for her version of Bolo-de-fuba. I fancied the idea of using dessicated/sweetened coconut. Hope Sally will forgive me for turning them into muffins. It did seem a good idea for kids and also reduces the baking time.
They turned out as decadent as expected, the coconut gives a crunchy top and the layers inside are moist. An easy peasy recipe and enriched snack to add in your child's snack box.
Bolo-de-fuba Muffins
Ingredients-
1 cup cornmeal
100gms dessicated/sweetened shredded coconut
1 cup grated cheese
3 cups milk
4 eggs
1 cup sugar (alter according to taste)
1 tbs baking powder
Preparation-
- Pre-heat oven.
- Blend all the ingredients to form a smooth batter.
- Pour into greased and dusted muffin trays.
- Bake till you get a slightly browned top.
( I am not adding the temperatures for baking since they cause Centigrade/ Fahrenheit confusions according to my readers locations. So set according to your oven.)
