This month I had a great time with my Secret Recipe Club assignment! I had Jess 's blog Flying on Jess Fuel.
I enjoyed browsing through her blog especially after I realized that she grew her veggies at home. Since I've been doing the same for a while I could relate to the situation where we have a bountiful harvest of one veggies and we try out all possible recipes with that veggie. I finally settled with Healthy Veggie Muffins. Though my homegrown zucchini is not yet ready for harvest, I decided to prepare this one because it absolutely fit in everything I love. A completely enriched muffin for the whole family to have as a snack, or brunch. The combination of veggies with cranberries and nuts seemed perfect!

Healthy Veggie Muffins.
Ingredients
1/2 cup whole wheat flour
1/2 cup flour
1/4 cup olive oil
1 egg
1 cup shredded yellow zucchini
1/2 cup carrot
1/4 cup dried cranberries
1/4 cup almonds
Honey to sweeten
2 tsp baking powder
1/2 tsp ground ginger
Pinch salt
Pinch nutmeg
Preparation
Preheat oven , grease and dust muffin tray.
In a dish mix all the wet ingredients. In a separate dish mix the dry ingredients.
Mix both and pour into the tray.
Bake till done.
Veggie muffins! Great choice, I am very fond of savory muffins, to me they are better than sweet ones, as I rarely eat breakfast.

ReplyDeleteI used to make this for my 2 year old without the cranberries and with sugar instead of honey (because I don't like the taste of cooked honey). For two years, he thought this was cake!!! lol!
