This month for the Secret Recipe Club i was assigned Wendy's blog. A Day in the life of a farm. I must admit as I browsed through Wendy's blog I couldn't help envying her. Wendy seems to have a farm life that I have always dreamed . Growing her own food, having chickens around, fresh eggs to enjoy. Wow!
I picked the recipe Spaghetti Aglio e Olio. It is simply so easy to whip up though it has this exotic tongue twisting name . As for the taste... My little boy polished it all. I did manage to get a wee bit in my mouth before he attacked it. Very simple combination of flavours, the garlic, olive oil and parsley blend perfectly. A must try pasta.
Spaghetti Aglio e Olio
Ingredients
1 lb dried spaghetti noodles
1/3 cup olive oil
6 tsp minced garlic
1/4 tsp crushed red pepper
1 Tsp salt
1/2 cup fresh parsley, finely chopped
1 cup shredded Parmesan
Preparation
- Bring a large pot of well salted water to a boil and cook the pasta.
- While the pasta is cooking, place a large skillet over low heat. Add the olive oil, garlic and crushed pepper and cook slowly for a few minutes. Add the cooking water and a tsp of salt simmer until reduced by half.
- Add the cooked pasta to the skillet along with the parsley and cheese. Toss to coat and serve with additional cheese for sprinkling.
A real classic, I used to eat that all the time growing up - now that my beloved husband cannot have garlic, it is a thing of my past...

ReplyDeleteI have made this with whole grain thin spaghetti. Yummy. Also, when my friend brings me fresh basil from her garden, I throw in a couple of chopped leaves of that as well (too much overwhelms the subtle flavor of the dish). I have to make it sans parmesan, sadly, due to food allergies, but it is still a fave. Be careful not to burn the garlic :-)

ReplyDeleteThis is one of my favourite dishes - one I frequently whip up when I want something quick and easy, or when the cupboards are just about bare. Just goes to show that you can make a great meal even when there is very little in the house :-) Excellent pick.
